Maple Roasted Beets & Carrots

For some, beets are a hit and miss vegetable. Obviously, we here at Whole Heart Farm are a fan- don’t you have to be a fan of the food you choose to grow? If you need a delightful, and EASY recipe to prep these amazing root veggies, you’re in the right place. Below you’ll find a colorful, nutritious, and just so happens to be vegan recipe!

Cooked carrots and beets, coated in delicious maple syrup makes for a delectable side dish for any protein you may be preparing. Since it’s basically sugar coated, you could even offer it up as dessert! 😉

So, without any further ado, here is the recipe for maple roasted beets and carrots (recipe adapted from Salt & Lavender)

Ingredients:

-5 medium carrots, sliced
-6 small beets, diced
-1.5 tablespoons avocado, coconut, or olive oil
-2 garlic cloves, diced
-Salt and pepper (to taste)
-3 tablespoons pure maple syrup

Instructions:

-Preheat oven to 425F degrees F
-After cutting carrots, beets, and garlic- place on baking dish (we usually line dish with parchment paper for less clean up)
-Pour oil of choice over the carrots and beets, season with salt and pepper, mix together until evenly coated
-Place into oven for 15 minutes
-Take dish out of oven, pour maple syrup over vegetables, mix until well coated
-Return to oven and roast for about 5 more minutes, or until the vegetables are crisp on the outside and tender (you’ll know this is the case if a fork easily slides into the veggies)
-Serve hot and enjoy
